Happy Birthday to my Aunt Sylvia. You are missed.

Today would have been my Aunt Sylvia's birthday. She had lung cancer and passed about a week after becoming ill this past August. We miss her. Lots.

In celebration of her special day the boys and I were going to make cupcakes...but then I got to thinking why not make one of her favorite cakes -- Oatmeal Cake. And, I thought I would share this recipe with all of you too, and if you make it some day you can enjoy something special from my Aunt to you.

She used to say that if she did not make this cake at least once a month my uncle Carl thought he was being punished. While that might be true, I think she really enjoyed making it because it was her favorite too.

Oatmeal Cake
1.25 cups boiling water
1 cup oatmeal
1/2 cup margarine
1 cup brown sugar
1 cup white sugar
2 eggs
1 1/2 cup flour
1/2 t. salt
1 t. soda
1 t. cinnamon
1 t. vanilla
Pour water over oatmeal and margarine. Cover and let stand 20 minutes. Add remaining ingredients. Bake in a 9x13 pan for 30 minutes at 350 degrees.

Topping

Combine 1/2 cup margarine, 1 cup brown sugar, 1.25 cups coconut, .75 cups chopped walnuts and a little milk. Heat until well blended and spread over warm cake. Place under a broiler until bubbly.
